- 3-4 tbs Oil
- 1 small chopped Onion (Pyaz)
- 1 tsp crushed Garlic (Lehsan)
- 1 large cubes Tomato (Tamatar)
- 2 chopped Green chilies (Hari mirch)
- ½ tsp Cumin seeds (Zeera)
- ½ tsp or to taste Salt (Namak)
- ¼ tsp Turmeric powder (Haldee powder)
- ½ tbs Coriander powder (Dhania powder)
- ½ tsp or to taste Red chili powder (Lal mirch powder)
- 2 Cups florets Cauliflower (Phool gobhi)
- 1 Cup peeled & cubes Potato (Aloo)
- 1 & ½ Cups or as required water
- ½ tsp Garam masala powder
- Chopped Fresh coriander (Hara dhania)
Preparation of Appealing Aloo Gobi with raita: Cauliflower & Potato Curry
Step 1: Cutting Vegetables
- Take fresh cauliflower and potatoes, washed thoroughly. Then cut the cauliflower into bite-sized florets or according to your choice.
- Cut the potatoes into cubes. And set aside.
Step 2: Sautéing the Spices
- Take a pot, add oil in it and place the pot on low medium flame.
- Then add chopped onion and fry until brown. Then add crushed garlic cook for a minute.
- After that add tomatoes, chopped green chilies and mix well. Cook on low medium flame for a minute.
- Now it’s time to add spices, add cumin seeds, salt, turmeric powder, coriander powder, and red chili powder mix them well.
- Add 2 tbs water and then cover the pot and simmer them on low medium flame for 2-3 minutes.
Step 3: Adding Vegetables
- When the spices are cooked add cut cauliflower and potatoes and mix well.
- Then add water in it, cover and cook for 8-10 minutes on low medium flame.
- When the potatoes & cauliflower are tender then cook until water dries and oil separate.

Step 4: Making Raita
- To prepare raita, take some fresh yogurt and whisk until smooth.
- Then make chutney, take green chilies, mint and coriander leaves, then blend them in the blender and make a paste.
- Now add prepare chutney according to your taste, add salt to taste, and mix well.
- Then add chopped cucumber, chopped onions, chopped tomato and finely chopped mint leaves, and a pinch of roasted cumin powder. Mix well, and your delightful raita is ready to serve.
