  5. 1 medium chopped Onion (Pyaz)
  6. 1 tbs crushed Garlic (Lehsan)
  7. 2-3 Green chilies (Hari mirch)
  8. 2 medium grinded Tomatoes (Tamatar)
  9. ¼ tsp powder Asafeotida (Hing)
  10. 1 tsp or to taste Red chili powder (Lal mirch powder)
  11. ¼ tsp Turmeric powder (Haldee powder)
  12. 1 tsp or to taste Salt (Namak)
  13. 250 gms White lentil gram (Mash daal) (soaked & boiled with salt)
  14. 1 Cup or as required Water (Pani)
  15. 1-2 tbs chopped Fresh coriander (Hara dhania)
  16. ½ tsp powder Garam masala

Tadka: (Optional)

  1. 2-3 tbs Cooking oil
  2. 5-6 Whole red chilies (Sabut lal mirch)
  3. ½ tsp Cumin seeds (Zeera)
  4. ¼ tsp Red chili powder (Lal mirch powder)
  5. Julienne Ginger (Adrak)
  6. Chopped Fresh coriander (Hara dhania)

Step 1: Soaking Urad Dal

  1. Take urad dal in a bowl and clean it thoroughly.
  2. Then rinse it under clean clear water.
  3. Then soak it in water for 4-6 hours.

Step 2: Preparing Tempering

  1. Take a deep pot and add oil in it, you can also use ghee.
  2. Then add cloves, black peppercorns and mix in oil.
  3. Add julienne ginger in oil and mix well.
  4. Then add chopped onion and fry them in oil or ghee until light brown.
  5. Then add crushed or paste garlic and mix it well.
  6. After that add green chilies cut in lengthwise and fry for a minute on low medium flame.
  7. Take tomatoes and blend them well by adding little water and make a paste, then add grinded tomatoes and mix them well with other ingredients.
  8. Then add other spices like asafoetida powder, red chili powder, turmeric powder and salt, mix well and cook for 2-3 minutes on low medium flame.

Step 3: Cooking the Dal

  1. Take a pot and add water in it, place it on the stove on low medium flame.
  2. Then drain soaked white lentil gram and then put into pot and mix well.
  3. Make a boil of water and then strain.
  4. Then add boiled white lentil gram into the prepared tempering and mix well and cook for 1-2 minute on low medium flame.
  5. Then add water and mix well with a spoon. Cook and cover the pot.
  6. Cook the Dhaba Style Dal Mash for 5 minutes on low flame and then simmer for 2 minutes or until lentil cooked.

Step 4: Adding Final Touch
